A New Love: Broccolini

There is something about this vegetable when lightly steamed it turns into such a vibrant green color. It's beautiful! Yep, that's right, I just said it was beautiful. I know I can be kind of a freak about the color of food, but the more color the more nutrition...right? In most cases I believe that to be true. This vegetable, broccolini, caught my attention this spring. It tastes yummy raw, steamed, sauteed, and probably other ways as well. I found out that it is really high in vitamin C, and also contains high amounts of vitamin A, calcium, folate and iron.

How is it different than broccoli? Well besides looking like a cross between broccoli and asparagus it tastes surprisingly sweeter...and the stem is a bit juicier. When cooking broccolini, less is more. Although I heard that it tastes delicious grilled with a little olive oil, sea salt, and fresh lemon juice. yum. yum.

Yum! You can roast it too, it's soooo good! If you just put it on a pan with olive oil, salt and pepper, then roast it at like 400 degrees for 10 minutes or something like that. It's sweet and it gets a little crunchy too, mmmm. I do the same thing with asparagus, it's my favorite!

That looks delicious! I love broccoli! Sadly, no broccoli for me right now... Eadie doesn't seem to tolerate it very well.
