raw apricot pie

I have such a sweet tooth! That is why I have been exploring so many raw sugarless treats. They taste so yummy!...yes I still eat chocolate chip cookies occasionally but the pie does not make me feel heavy and bloated. Plus with no sugar in it, it won't weaken my immune system!...I know, I am such a dork. :) Here is a really simple recipe I found. It was originally made with mangoes, but I could not find any dried mangoes at the store that did not have sugar added to it. You could use any kind of dried fruit that you like. It is not super cheap to make, but it lasts a while. You could always stick it in your freezer and take out a slice whenever you feel like it. It makes for a really refreshing treat!

1 cup dried apricots
1 cup filtered water
3/4 cup raw almonds
3/4 cup raw walnuts
3/4 cup dried dates, pitted

*put dried apricots and water in a bowl to soak at room temperature for 2 hours. Puree the soaked apricots in the soaking water until smooth. Set aside. In food processor, chop almonds, walnuts and dates. Then press nuts and dates into a glass pie pan and spoon apricot puree over top. Voila!

oooh this looks great! i made a batch of applesauce last night after dinner for mateo, and end up snacking on some. later i realized that for once i wasn't craving chocolate or sweets after a meal. it is hard for my brain to process fruit (only) as a dessert, (even though it is totally yummy) but it is definitely something i am going to pursue. thanks!

so is the apricot part sort of apple-saucy in the middle or does it firm up at all? it sounds good!

yes, it is just like an applesauce consistency, but firms up when put in the fridge and even more when put in the freezer.
